Suji ka cheela (Rava chilla) is a popular North Indian savory pancake made with semolina, onions, herbs, and spices. It’s light, filling, and very easy to make.

🧂 Ingredients

  • 1 cup fine sooji (rava / cream of wheat)

  • ¼ cup onion, finely chopped

  • 1 to 2 green chillies, chopped

  • ½ tsp ginger, finely chopped

  • 2 to 3 tbsp coriander leaves, chopped

  • ¼ tsp carom seeds (ajwain) or cumin seeds

  • 1 pinch red chilli powder (or cayenne pepper)

  • 1 pinch turmeric powder

  • Salt to taste

  • 1.25 cups water (1 cup + ¼ cup as needed)

  • Oil for cooking

👩‍🍳 Instructions

1. Make the batter

  • Take sooji in a bowl.

  • Add 1 cup water and mix well.

  • Cover and rest for 20 to 30 minutes.

  • After resting, rava will absorb water and become soft.

  • Add onions, green chillies, ginger, coriander leaves, ajwain (or cumin), red chilli powder, turmeric, and salt.

  • Mix well.

  • Add remaining ¼ cup water (if needed) to get a slightly medium-thick batter.

2. Make the cheela

  • Heat a tawa or skillet and lightly grease with oil.

  • Keep flame on low heat.

  • Take a ladle of batter and gently spread into a small to medium round cheela.

  • Do not spread too thin or it will break.

  • Cook on low to medium heat.

  • When top looks cooked, drizzle a little oil on sides and top and spread it.

  • When base turns light golden, flip and cook the other side.

  • Cook till the second side is light golden and onions look caramelized.

  • Remove and repeat with remaining batter.

🍽️ Serve with

  • Green chutney

  • Tomato ketchup

  • Coconut chutney

  • Mint chutney

Best served hot or warm 🌿

📝 Notes & Tips

  • Use fresh sooji (within shelf life).

  • Do not make batter too runny or cheela will be difficult to spread.

  • Always use a well-seasoned tawa so the cheela does not stick.

  • Recipe serves 1–2 persons and can be easily doubled or tripled.
