Daliya (cracked wheat) is a healthy Indian grain used to make both sweet and savory dishes. Daliya Khichdi is a light, nutritious one-pot meal prepared with vegetables, mild spices, and herbs. It is easy to digest and commonly made as comfort food.

🥕 Ingredients

1 cup dalia (broken wheat / cracked wheat)

⅓ cup onion, finely chopped

1 teaspoon ginger, finely chopped

½ to 1 teaspoon green chillies, finely chopped
-
½ cup tomatoes, finely chopped
-
½ cup carrots, chopped
-
½ cup potatoes, chopped
-
½ cup green peas (fresh or frozen)
-
4 cups water
-
1 teaspoon cumin seeds
-
1 tablespoon oil or ghee
-
Salt, to taste
👩🍳 Instructions
1. Preparation
-
Rinse the dalia well in a strainer and set aside.

Wash and chop all vegetables into small cubes.
-
Finely chop onions, tomatoes, ginger, and green chillies.
2. Making Daliya Khichdi
-
Heat oil or ghee in a 3-litre pressure cooker on medium-low heat.

Add cumin seeds and let them splutter.
-
Add chopped onions and sauté till soft and translucent.
-
Add ginger and green chillies; sauté for a few seconds until raw smell disappears.
-
Add chopped tomatoes and sauté for 1 minute.
-
Add potatoes, carrots, and green peas. Mix and sauté for 2 minutes.

Add rinsed dalia and sauté for 3–4 minutes on low heat.

Add 4 cups water and salt. Mix well.
-
Pressure cook on medium heat for 10–12 whistles (or about 11–13 minutes) until dalia is soft and fully cooked.

Let pressure release naturally. Open lid and check consistency.

If undercooked, add a little water and cook for a few more whistles or simmer without lid until soft and porridge-like.

📝 Notes & Variations

Use fine or medium-fine broken wheat for soft texture.

You can use vegetables like cauliflower, beans, spinach, bottle gourd, broccoli, pumpkin, or capsicum.

For thinner consistency, add more water.
