  1. Add the chopped pineapple to a blender or mixer jar.

  2. Pour in 1 cup of lite coconut milk and add the ground cinnamon.

  3. Blend until the pineapple is completely pureed with no visible chunks.

  4. Add the remaining ½ cup lite coconut milk.
