Muthia is a classic Gujarati snack made from spiced flour and vegetables, shaped by hand and usually steamed for a soft, healthy texture. It can also be lightly fried or tempered for extra flavor.

For the Muthia Dough

1 cup whole wheat flour

¼ cup besan (gram flour)

2 tablespoons semolina (sooji) – optional
-
½ teaspoon turmeric powder

1 teaspoon ginger–green chilli paste

1 teaspoon sugar or jaggery
-
1 teaspoon sesame seeds
-
Salt to taste
-
1 tablespoon oil
-
1 teaspoon lemon juice
-
Water, as required
-
1 teaspoon ENO fruit salt or baking soda
For Tempering (Optional)

1 tablespoon oil
-
1 teaspoon mustard seeds
-
1 teaspoon sesame seeds
-
8–10 curry leaves
-
1–2 green chilies, slit

1. Prepare the Dough

In a bowl, mix wheat flour, besan, semolina, turmeric, sesame seeds, sugar, and salt.

Add ginger–chilli paste, oil, and lemon juice.

Add water gradually to form a soft, smooth dough.
-
Just before steaming, mix in ENO gently.
2. Shape the Muthia

Grease your palms lightly.

Take small portions of dough and shape into short cylindrical rolls using your fist (traditional style).
3. Steam
-
Place the shaped muthia in a greased steamer plate.

Steam for 15–20 minutes until firm and cooked through.

Cool slightly and cut into slices if desired.
4. Temper (Optional but Traditional)

Heat oil in a pan.
-
Add mustard seeds; let them crackle.
-
Add sesame seeds, curry leaves, and green chilies.
-
Add steamed muthia and toss gently to coat.
