A nourishing, gluten-free Indian sweet
Flax Seed Burfi is a wholesome, modern take on traditional Indian sweets—combining the goodness of flax seeds and nuts into a naturally nourishing treat. Ingredients

½ cup golden flaxseed powder (flax meal)

½ cup walnuts, coarsely ground

½ cup almonds, coarsely ground

½ cup cashews, coarsely ground

1 tablespoon crushed cardamom
(about 8 cardamom pods) -
1 cup sugar

¼ cup water
Instructions
Step 1: Prepare the Tray
-
Grease an 8-inch plate or tray and set aside.
Step 2: Roast the Seeds & Nuts

Heat a heavy-bottomed pan over medium heat.

Dry roast the flaxseed powder for about 1 minute, stirring continuously.

Add the ground walnuts, almonds, and cashews.
-
Continue dry roasting for 2 minutes, stirring constantly.

Do not over-roast—the nuts can release oil and affect texture.

Turn off the heat, add crushed cardamom, mix well, and transfer to a bowl. Set aside.
Step 3: Prepare the Sugar Syrup

In the same pan, combine sugar and water.

Bring to a boil over medium heat.

Reduce heat slightly and simmer for 1–2 minutes.

To test consistency:

Place a drop on a dry surface—it should feel just sticky when touched.

Candy thermometer reading should be around 205°F (96°C).

Turn off the heat.
Step 4: Combine & Set

Immediately add the roasted nut–seed mixture to the hot syrup.

Mix thoroughly.

Quickly spread the mixture onto the greased plate.

Press firmly from all sides to create an even layer about ¼ inch thick, smoothing the edges.
Step 5: Cool & Cut

Allow to cool for a few minutes.

Cut into 1½-inch square pieces while still slightly warm.
Storage

Store in an airtight container.

Flax Seed Burfi has a long shelf life and keeps well at room temperature.
